Neapolitan Pizza, Italy's Icon

Born in the streets of Naples in the 18th century, Neapolitan pizza went from a popular dish to a true symbol of Italian gastronomy. Its iconic recipe, the Margherita — tomato, mozzarella, and basil in the flag's colors — was reportedly created in 1889 honoring Queen Margherita of Savoy.

A simple dough, demanding craftsmanship

Despite its apparent simplicity, Neapolitan pizza is based on a highly worked dough: 00-type wheat flour rich in gluten, slow fermentation, and precise hydration yielding a soft, elastic texture. It's traditionally baked in a very high-temperature oven, perfectly searing the dough in seconds while keeping the crumb soft.

The cornicione, the Neapolitan signature

True Neapolitan pizza is recognized by its cornicione, the puffed, honeycomb crust slightly scorched by the flames. To the bite, it is both meltingly soft and slightly crispy, with the typical flavor of well-fermented dough.

Excellence through simplicity: noble and authentic ingredients

Faithful to tradition, the toppings remain intentionally modest: high-quality tomatoes, fior di latte or bufala mozzarella, extra virgin olive oil, and a few fresh basil leaves. The balance lies more in the quality of the products and baking mastery than in an abundance of cheese.

In Naples, pizza is considered a complete art form, to the point that the craftsmanship of the pizzaioli was added to UNESCO's Intangible Cultural Heritage list in 2017.
